About NOLA Boiling Co

NOLA Boiling Co founder Jason Jaume is a native of New Orleans, LA and has lived in Santa Rosa Beach, FL since 2013. In 2020, Chef Jason opened DIXIELAND CHICKEN CO in Destin, serving Creole Fried Chicken and other Creole/Cajun cuisine. He has been in the service industry for over 31 years, in every aspect of the business and was the Co-Owner of The Marigny Restaurant in SRB from 2013-2015, along with his childhood friend, Chef Chris Mongogna Jr.  The Marigny was a critically acclaimed restaurant serving authentic Louisiana Creole cuisine.  The NOLA Boiling Co was created after popular demand for Chef Jason’s seafood boils, and the award-winning Marigny Creole menu & cocktails.

 

Chef Jason learned how to boil amazing LA seafood from his father, the late Henry Jaume Sr, when he was a young boy, and has passed “PawPaw’s” recipes & techniques to his sons as well.  As a Father of six, and Grandfather of seven, Chef Jason knows the importance of a delicious meal shared with family.  He looks forward to bringing some spicy Louisiana Creole & Cajun cuisine to your family soon!
